One of my personal favorites. I love eating the leftovers for breakfast the next day haha.
You will need:
8 large potatoes, boiled and skinned and diced and put into a 9x 13 pan
Mix together in a bowl:
2 cans cream of chicken soup
1 8oz carton sour cream
1/2 cup finely chopped green onion
Salt & Pepper to taste
Pour over potatoes and mix in well with potatoes. Spread 2 cups grated cheese over the top. Crush 2 cups corn falkes and stir 1/4 cup melted butter into corn flakes. Sprinkle on top of cheese and bake for 45 minutes at 300.

Chili Cheese Dip
1 lb hamburger
1 lb Velveeta cheese
salt and pepper to taste
dash of Worcestershire sauce
1 small onion, diced
1 can of Hormel Chili without the beans
Brown the hamburger and drain. Melt Velveeta on low and add the hamburger and all the other ingredients. Serve warm in a crock pot or a saucepan with taco chips.

Tater Tot Casserole
1 large bag of tater tots - spread in ungreased 9X13 Pan
1 pound hamburger - browned and seasoned to taste
1 small onion - diced and cooked with hamburger
Spread meat over tater tots
Mix together: 2 can cream of mushroom soup
and 1/2 cup water
Pour over other stuff. Bake at 450 degrees for 15 to 20 minutes. Cover with grated cheese and put in oven to melt.
I usually put the tater tots in the oven while I'm browning the meat to give them a head start, and I've also used cream of chicken instead of cream of mushroom and it was really good.

Crunchy Beef Bake Casserole

2 cups uncooked corkscrew macaroni
1 pound ground beef
1 can condensed cream of mushroom soup
1 can (14 1/2 oz.) whole tomatoes
3/4 cup shredded cheddar cheese
3/4 cup green pepper
3/4 tsp seasoned salt
1 can (3 oz.) French Fried Onions
Cook macaroni as directed on package; drain. Brown ground beef; drain fat. Combine all ingredients except French Fried Onions. Pour into a greased 2 quart casserole dish. Cover and bake at 350 degrees for 30 minutes. Uncover; top with French Fried Onions, and bake 5 minutes longer. Makes 4-6 servings.

1 package frozen chopped broccoli
1/2 cup mayonaise
1/2 can cream of mushroom soup
1 beaten egg
1 tsp chopped onion
3/4 cup heaping grated cheese
Ritz crackers, crushed
salt
Cook broccoli five minutes in a lightly salted water, drain. Mix with egg, onion, and cheese. Add mayonaise and soup. Place mixture in casserole dish and top with the crushed crackers. Bake at 300 degrees for 30 minutes. Serves 6 to 8.
